Acini di pepe (Italian wedding soup)

What you'll need:
1 Whole chicken
2 cups escarole chopped
2 cups carrots chopped
1 onion chopped
1 cup cooked Acini di pepe
1 cup celery chopped
What to do:
Boil chicken for 4 hours, remove chicken, take off the meat and add it back to the stock
In a large stock pot sauté onions and celery until translucent.
Add stock and carrots and cook until carrots are just soft (about 4 minutes).
Add escarole and Acini di pepe
