Roasted Chicken and Veggies
Here's what you'll need:
2 pounds bone in skin on chicken thighs
1 red onion peeled and quartered
4 carrots peeled and chooped
1 bunch of kale deveined and chopped
1 teaspoon of poultry seasoning
Salt and pepper
Here's what to do:
salt and pepper chicken and season with poultry seasoning.
Place chicken, carrots and onion in a large roasting pan.
Bake on 350 for 1 hour our until chicken reads 160.
Nestle kale down into pan around the chicken.
Set oven to broil on 500 degrees and cook for 5 or 10 minutes or until skin is crispy.
